Ingredients

  • Large ripe tomatoes - 4
  • Cooked rice - 100 grams
  • Feta cheese, crumbled - 50 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh dill, chopped - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Garlic, minced - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the tomatoes and scoop out the insides, being careful not to break the skin.
  3. In a bowl, combine the cooked rice, crumbled feta, parsley, dill, minced garlic, olive oil, lemon juice, salt, and black pepper. Mix well.
  4. Stuff the hollowed tomatoes with the rice mixture, packing it gently.
  5. Place the stuffed tomatoes in a baking dish and drizzle a little more olive oil over the tops.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes to allow the tops to brown slightly.
  8. Remove from oven, let cool for a few minutes, and serve warm.
