- Large ripe tomatoes - 4
- Cooked rice - 100 grams
- Feta cheese, crumbled - 50 grams
- Fresh parsley, chopped - 2 tablespoons
- Fresh dill, chopped - 1 tablespoon
- Olive oil - 2 tablespoons
- Garlic, minced - 1 clove
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the tomatoes and scoop out the insides, being careful not to break the skin.
- In a bowl, combine the cooked rice, crumbled feta, parsley, dill, minced garlic, olive oil, lemon juice, salt, and black pepper. Mix well.
- Stuff the hollowed tomatoes with the rice mixture, packing it gently.
- Place the stuffed tomatoes in a baking dish and drizzle a little more olive oil over the tops.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the tops to brown slightly.
- Remove from oven, let cool for a few minutes, and serve warm.
