- Bell Peppers - 2 large
- Quinoa - 100 grams
- Chickpeas - 150 grams, cooked
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Cook the quinoa according to package instructions; typically, combine 100 grams of quinoa with 200 ml of water in a saucepan, bring to a boil, then simmer for 15 minutes until water is absorbed.
- While the quinoa is cooking, prepare the bell peppers by cutting the tops off and removing the seeds. Lightly brush the outside with olive oil and set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red onion and minced garlic, sautéing until softened, about 3-4 minutes.
- Add the cooked quinoa, chickpeas, diced tomato, chopped parsley, smoked paprika, oregano, salt, and black pepper to the skillet. Mix well and cook for another 2-3 minutes until heated through.
- Remove the skillet from heat and stir in the lemon juice.
- Stuff each bell pepper with the quinoa mixture, packing it in gently.
- Place the stuffed peppers upright in a baking dish. Add a little water to the bottom of the dish to help steam the peppers while they bake.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and slightly charred.
- Remove from oven, let cool for a few minutes, and serve warm.
