- Feta cheese - 100 grams, crumbled
- Egg - 1 large
- Dill - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the long-grain rice and cook for 1-2 minutes, allowing the rice to absorb the flavors.
- Pour in the vegetable broth, add salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, rinse the spinach under cold water. In a large pan, heat the remaining tablespoon of olive oil over medium heat. Add the spinach and cook until wilted, about 3-4 minutes.
- In a large mixing bowl, combine the cooked rice, wilted spinach, crumbled feta cheese, dill, lemon juice, and the beaten egg. Mix well to combine all ingredients.
- Transfer the mixture to a greased baking dish and spread evenly. Bake in the preheated oven for 20 minutes, or until the top is slightly golden.
- Remove from the oven, let it cool for a few minutes, and serve warm.
