- Fresh spinach - 300 grams
- Feta cheese - 150 grams, crumbled
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Eggs - 2 large
- Dill - 1 tablespoon, chopped
- Parsley - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 50 grams
- Lemon - 1, for zest and juice
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the fresh spinach and cook until wilted, about 3-5 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the crumbled feta cheese, cooled spinach mixture, dill, parsley, eggs, lemon zest, salt, and black pepper. Mix until well combined.
- Grease a small baking dish with olive oil and sprinkle the breadcrumbs evenly on the bottom.
- Pour the spinach and feta mixture into the prepared dish, spreading it evenly.
- Drizzle a little olive oil on top and sprinkle additional breadcrumbs if desired.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
- Remove from the oven, let cool for a few minutes, then serve warm with a squeeze of lemon juice.
