  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium (approximately 150 grams)
  • Garlic, minced - 2 cloves
  • Bell pepper, diced - 1 medium (approximately 150 grams)
  • Zucchini, diced - 1 medium (approximately 150 grams)
  • Carrot, diced - 1 medium (approximately 100 grams)
  • Cherry tomatoes, halved - 100 grams
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced bell pepper, zucchini, and carrot. Cook for another 5-6 minutes until the vegetables are slightly tender.
  4. Add the basmati rice to the vegetable mixture, stirring to combine. Cook for an additional 2 minutes, allowing the rice to toast slightly.
  5. Pour in the vegetable broth, and add the halved cherry tomatoes, dried oregano, salt, and black pepper. Bring to a gentle simmer.
  6. Transfer the mixture to a baking dish, cover it with aluminum foil, and bake in the preheated oven for 25 minutes.
  7. After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the rice is fully cooked and the liquid is absorbed.
  8. Remove from the oven, fluff the rice with a fork, and garnish with chopped fresh parsley before serving.
