- Zucchini, diced - 1 medium (approximately 150 grams)
- Carrot, diced - 1 medium (approximately 100 grams)
- Cherry tomatoes, halved - 100 grams
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced bell pepper, zucchini, and carrot. Cook for another 5-6 minutes until the vegetables are slightly tender.
- Add the basmati rice to the vegetable mixture, stirring to combine. Cook for an additional 2 minutes, allowing the rice to toast slightly.
- Pour in the vegetable broth, and add the halved cherry tomatoes, dried oregano, salt, and black pepper. Bring to a gentle simmer.
- Transfer the mixture to a baking dish, cover it with aluminum foil, and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the rice is fully cooked and the liquid is absorbed.
