  • Water - 300 milliliters
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Red onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the basmati rice under cold water until the water runs clear, then drain.
  3. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes or until water is absorbed.
  4. While the rice is cooking, heat olive oil in a skillet over medium heat. Add the diced red onion and garlic, sautéing until translucent.
  5. Add the cherry tomatoes and spinach to the skillet, cooking until the spinach wilts and the tomatoes soften, about 3-4 minutes.
  6. In a large mixing bowl, combine the cooked rice, sautéed vegetables, crumbled feta cheese, dried oregano, lemon juice, salt, and pepper. Mix well.
  7. Transfer the mixture into a baking dish, spreading it out evenly.
  8. Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
