Ingredients

  • 2 medium-sized potatoes (about 250g each)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 2 tablespoons chopped fresh parsley
  • Optional: lemon wedges for serving

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly to remove any dirt.
  3. Prick each potato several times with a fork to allow steam to escape during baking.
  4. Rub the potatoes with olive oil, then sprinkle with sea salt and black pepper.
  5. Place the potatoes directly on the oven rack or on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for about 45-50 minutes, or until the potatoes are tender and a fork can easily pierce through.
  7. While the potatoes are baking, prepare the lemon dressing by mixing the lemon juice, lemon zest, and chopped parsley in a small bowl.
  8. Once the potatoes are done, remove them from the oven and let them cool for a few minutes before slicing them open.
  9. Drizzle the lemon dressing over the warm potatoes and serve with optional lemon wedges on the side.
