  • 1 tablespoon fresh oregano, chopped
  • 1 clove garlic, minced
  • 1 lemon, zested and juiced
  • Optional: 1 small red onion, diced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly, then dry them with a towel.
  3. Poke several holes in each potato using a fork to allow steam to escape during baking.
  4. Rub the potatoes with olive oil, sea salt, and black pepper, ensuring they are evenly coated.
  5. Place the potatoes directly on the oven rack and bake for 60-70 minutes, or until they are tender when pierced with a fork.
  6. While the potatoes are baking, prepare the filling. In a bowl, combine chopped parsley, dill, oregano, minced garlic, lemon zest, lemon juice, and diced onion if using.
  7. Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes.
  8. Slice the potatoes in half lengthwise and gently scoop out some of the flesh, leaving enough to maintain the potato's shape.
  9. Mix the scooped-out potato flesh with the herb mixture until well combined.
  10. Spoon the herb-filled mixture back into the potato skins, packing it in lightly.
  11. Return the filled potatoes to the oven for an additional 10 minutes to heat through.
  12. Serve warm, garnished with additional fresh herbs if desired.
