Ingredients
- 2 medium-sized russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh oregano, chopped
- 1 clove garlic, minced
- 1 lemon, zested and juiced
- Optional: 1 small red onion, diced
Steps
- Preheat your oven to 200°C (400°F).
- Wash and scrub the potatoes thoroughly, then dry them with a towel.
- Poke several holes in each potato using a fork to allow steam to escape during baking.
- Rub the potatoes with olive oil, sea salt, and black pepper, ensuring they are evenly coated.
- Place the potatoes directly on the oven rack and bake for 60-70 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the filling. In a bowl, combine chopped parsley, dill, oregano, minced garlic, lemon zest, lemon juice, and diced onion if using.
- Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes.
- Slice the potatoes in half lengthwise and gently scoop out some of the flesh, leaving enough to maintain the potato's shape.
- Mix the scooped-out potato flesh with the herb mixture until well combined.
- Spoon the herb-filled mixture back into the potato skins, packing it in lightly.
- Return the filled potatoes to the oven for an additional 10 minutes to heat through.
- Serve warm, garnished with additional fresh herbs if desired.
