Ingredients

  • 2 large bell peppers (any color)
  • 100 grams of uncooked rice
  • 200 ml vegetable broth
  • 100 grams feta cheese, crumbled
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened, about 5 minutes.
  4. Add the rice to the saucepan and stir for 1-2 minutes. Pour in the vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  5. Remove the saucepan from heat and stir in the crumbled feta cheese, oregano, thyme, salt, and black pepper.
  6. Stuff each bell pepper with the rice mixture, packing it gently.
  7. Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
  8. Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
