Ingredients
- 2 large bell peppers (any color)
- 100 grams of uncooked rice
- 200 ml vegetable broth
- 100 grams feta cheese, crumbled
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened, about 5 minutes.
- Add the rice to the saucepan and stir for 1-2 minutes. Pour in the vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove the saucepan from heat and stir in the crumbled feta cheese, oregano, thyme, salt, and black pepper.
- Stuff each bell pepper with the rice mixture, packing it gently.
- Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
