Ingredients

  • Lamb chops - 4 pieces (approximately 300g)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Feta cheese - 50g, crumbled (for serving)
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Red onion - 1/2 medium, sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, combine olive oil, minced garlic, chopped rosemary, thyme, lemon juice, salt, black pepper, and paprika to create a marinade.
  3. Add the lamb chops to the marinade and coat well. Let them marinate for at least 30 minutes, or up to 2 hours in the fridge.
  4. While the lamb is marinating, prepare the vegetables by tossing the sliced zucchini, bell pepper, and red onion in olive oil, salt, and pepper.
  5. Spread the marinated lamb chops on a baking sheet and arrange the vegetables around them.
  6. Bake in the preheated oven for 25-30 minutes or until the lamb reaches your desired level of doneness (medium-rare is approximately 60°C/140°F internally).
  7. Remove from the oven, let the lamb rest for 5 minutes, then serve with crumbled feta cheese on top.
