- Lamb chops - 4 pieces (approximately 300g)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Feta cheese - 50g, crumbled (for serving)
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Red onion - 1/2 medium, sliced
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine olive oil, minced garlic, chopped rosemary, thyme, lemon juice, salt, black pepper, and paprika to create a marinade.
- Add the lamb chops to the marinade and coat well. Let them marinate for at least 30 minutes, or up to 2 hours in the fridge.
- While the lamb is marinating, prepare the vegetables by tossing the sliced zucchini, bell pepper, and red onion in olive oil, salt, and pepper.
- Spread the marinated lamb chops on a baking sheet and arrange the vegetables around them.
- Bake in the preheated oven for 25-30 minutes or until the lamb reaches your desired level of doneness (medium-rare is approximately 60°C/140°F internally).
- Remove from the oven, let the lamb rest for 5 minutes, then serve with crumbled feta cheese on top.
