Ingredients

  • 2 medium bell peppers - 200g
  • 2 medium tomatoes - 300g
  • 100g long-grain rice
  • 1 small onion - 50g, finely chopped
  • 2 cloves garlic - 10g, minced
  • 2 tablespoons olive oil - 30ml
  • 1 teaspoon dried oregano - 2g
  • 1 teaspoon dried thyme - 2g
  • Salt - to taste
  • Black pepper - to taste
  • 2 tablespoons fresh parsley - 10g, chopped
  • 300ml vegetable broth

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and tomatoes, then scoop out the insides of the peppers and the pulp of the tomatoes, keeping the shells intact.
  3. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  4. Stir in the rice, dried oregano, dried thyme, salt, and black pepper. Cook for 2-3 minutes, then add the vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed. Remove from heat and stir in the chopped parsley.
  6. Stuff the bell peppers and tomatoes with the rice mixture, pressing down gently to pack it in.
  7. Place the stuffed vegetables in a baking dish and drizzle a little olive oil on top. Cover with foil.
  8. Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the tops are slightly golden.
  9. Remove from the oven and let cool for a few minutes before serving.
