Ingredients
- 2 medium bell peppers - 200g
- 2 medium tomatoes - 300g
- 100g long-grain rice
- 1 small onion - 50g, finely chopped
- 2 cloves garlic - 10g, minced
- 2 tablespoons olive oil - 30ml
- 1 teaspoon dried oregano - 2g
- 1 teaspoon dried thyme - 2g
- Salt - to taste
- Black pepper - to taste
- 2 tablespoons fresh parsley - 10g, chopped
- 300ml vegetable broth
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and tomatoes, then scoop out the insides of the peppers and the pulp of the tomatoes, keeping the shells intact.
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Stir in the rice, dried oregano, dried thyme, salt, and black pepper. Cook for 2-3 minutes, then add the vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed. Remove from heat and stir in the chopped parsley.
- Stuff the bell peppers and tomatoes with the rice mixture, pressing down gently to pack it in.
- Place the stuffed vegetables in a baking dish and drizzle a little olive oil on top. Cover with foil.
- Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the tops are slightly golden.
- Remove from the oven and let cool for a few minutes before serving.
