- Bell pepper - 1 medium, chopped
- Parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
Steps
- Preheat your oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped bell pepper to the skillet, cooking for another 3-4 minutes until softened.
- Stir in the diced tomatoes, oregano, salt, and black pepper. Allow the mixture to simmer for about 10 minutes, stirring occasionally.
- While the sauce simmers, place the fish fillets in a baking dish. Drizzle with lemon juice and sprinkle with chopped parsley.
- Pour the tomato mixture evenly over the fish fillets in the baking dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional parsley if desired.
