Ingredients
- Feta cheese - 200 grams
- Pasta (whole wheat or high-protein) - 200 grams
- Cherry tomatoes - 250 grams
- Spinach (fresh) - 100 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 3 cloves
- Red pepper flakes - 1/2 teaspoon
- Black pepper - to taste
- Salt - to taste
- Basil (fresh, chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes and spinach.
- Drizzle olive oil over the feta and vegetables, then sprinkle with minced garlic, red pepper flakes, black pepper, and salt.
- Bake in the preheated oven for 20 minutes, or until the feta is soft and slightly golden.
- While the feta is baking, cook the pasta according to package instructions in a pot of salted boiling water until al dente.
- Drain the pasta and reserve a little pasta water.
- Once the feta and vegetables are done, remove from the oven and mix everything together, adding the cooked pasta, basil, and lemon juice.
- If needed, add a splash of reserved pasta water to loosen the mixture, then serve hot.
