Ingredients

  • Feta cheese - 200 grams
  • Pasta (whole wheat or high-protein) - 200 grams
  • Cherry tomatoes - 250 grams
  • Spinach (fresh) - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 3 cloves
  • Red pepper flakes - 1/2 teaspoon
  • Black pepper - to taste
  • Salt - to taste
  • Basil (fresh, chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes and spinach.
  3. Drizzle olive oil over the feta and vegetables, then sprinkle with minced garlic, red pepper flakes, black pepper, and salt.
  4. Bake in the preheated oven for 20 minutes, or until the feta is soft and slightly golden.
  5. While the feta is baking, cook the pasta according to package instructions in a pot of salted boiling water until al dente.
  6. Drain the pasta and reserve a little pasta water.
  7. Once the feta and vegetables are done, remove from the oven and mix everything together, adding the cooked pasta, basil, and lemon juice.
  8. If needed, add a splash of reserved pasta water to loosen the mixture, then serve hot.
