Ingredients

  • Feta cheese - 200 grams
  • Cherry tomatoes - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh oregano - 1 tablespoon, chopped
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Spinach - 100 grams, fresh
  • Eggs - 2 large

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes.
  3. Drizzle olive oil over the feta and tomatoes, then sprinkle minced garlic, fresh oregano, black pepper, and red pepper flakes on top.
  4. Bake in the preheated oven for 20 minutes, until the feta is soft and slightly golden.
  5. While the feta is baking, sauté the fresh spinach in a non-stick skillet over medium heat until wilted, about 3-4 minutes.
  6. Once the feta is done, remove it from the oven and carefully crack the eggs on top of the melted feta and tomatoes.
  7. Return the dish to the oven and bake for an additional 5-7 minutes, or until the eggs are cooked to your liking.
  8. Serve immediately, garnished with extra oregano if desired.
