- Feta cheese - 200 grams
- Cherry tomatoes - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh oregano - 1 tablespoon, chopped
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Spinach - 100 grams, fresh
- Eggs - 2 large
Steps
- Preheat the oven to 200°C (400°F).
- In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes.
- Drizzle olive oil over the feta and tomatoes, then sprinkle minced garlic, fresh oregano, black pepper, and red pepper flakes on top.
- Bake in the preheated oven for 20 minutes, until the feta is soft and slightly golden.
- While the feta is baking, sauté the fresh spinach in a non-stick skillet over medium heat until wilted, about 3-4 minutes.
- Once the feta is done, remove it from the oven and carefully crack the eggs on top of the melted feta and tomatoes.
- Return the dish to the oven and bake for an additional 5-7 minutes, or until the eggs are cooked to your liking.
- Serve immediately, garnished with extra oregano if desired.
