Steps
- Preheat the oven to 180°C (350°F).
- In a medium skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant (about 1 minute).
- Add the chopped spinach and cherry tomatoes to the skillet, cooking until the spinach is wilted and the tomatoes are slightly softened (about 3-4 minutes).
- Remove the skillet from heat and stir in the dried oregano, salt, and black pepper.
- In a baking dish, spread the spinach and tomato mixture evenly.
- Make four small wells in the mixture and crack an egg into each well.
