  • Cherry tomatoes - 150 grams, halved
  • Fresh spinach - 100 grams, roughly chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant (about 1 minute).
  3. Add the chopped spinach and cherry tomatoes to the skillet, cooking until the spinach is wilted and the tomatoes are slightly softened (about 3-4 minutes).
  4. Remove the skillet from heat and stir in the dried oregano, salt, and black pepper.
  5. In a baking dish, spread the spinach and tomato mixture evenly.
  6. Make four small wells in the mixture and crack an egg into each well.
  7. Sprinkle the crumbled feta cheese evenly over the eggs and the vegetable mixture.
  8. Bake in the preheated oven for 15-20 minutes or until the egg whites are set but the yolks are still slightly runny.
