- Feta cheese - 100 grams, crumbled
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Fresh oregano - 1 tablespoon, chopped
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tomato sauce - 200 grams (sugar-free)
- Mozzarella cheese - 100 grams, shredded
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant lengthwise into 1/2 cm thick slices and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with a paper towel.
- In a mixing bowl, combine the ricotta cheese, crumbled feta, grated parmesan, chopped parsley, oregano, minced garlic, and black pepper. Mix until well combined.
- Brush both sides of the eggplant slices with olive oil and place them on a baking sheet lined with parchment paper.
- Roast the eggplant slices in the preheated oven for about 15 minutes, flipping halfway through, until they are tender and slightly golden.
- Remove the eggplant from the oven and let cool slightly. Then, place a spoonful of the cheese mixture at one end of each slice and roll them up tightly.
- Spread a layer of tomato sauce on the bottom of a baking dish and arrange the eggplant rolls seam-side down. Pour the remaining tomato sauce over the top and sprinkle with shredded mozzarella cheese.
- Bake in the oven for an additional 20 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving. Enjoy your delicious Baked Eggplant Rolls!
