- Cod fillets - 300 grams
- Cherry tomatoes - 200 grams, halved
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red onion - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the halved cherry tomatoes, minced garlic, diced red onion, olive oil, oregano, lemon juice, salt, and black pepper. Toss well to coat the tomatoes evenly.
