Ingredients

  • Cod fillets - 300 grams
  • Cherry tomatoes - 200 grams, halved
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red onion - 1 small, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the halved cherry tomatoes, minced garlic, diced red onion, olive oil, oregano, lemon juice, salt, and black pepper. Toss well to coat the tomatoes evenly.
  3. Spread the tomato mixture evenly in a baking dish.
