- Cod fillets - 300 grams
- Black olives, pitted and sliced - 100 grams
- Cherry tomatoes, halved - 200 grams
- Red onion, thinly sliced - 1 medium
- Garlic, minced - 2 cloves
- Olive oil - 3 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Fresh oregano, chopped - 1 tablespoon
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large baking dish, combine the sliced olives, cherry tomatoes, red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil, lemon juice, salt, and black pepper. Toss to combine.
- Place the cod fillets on top of the vegetable mixture in the baking dish. Drizzle the remaining tablespoon of olive oil over the cod, and season with salt and pepper.
- Sprinkle the chopped parsley and oregano over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cod flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.
