Ingredients

  • Cod fillets - 300 grams
  • Black olives, pitted and sliced - 100 grams
  • Cherry tomatoes, halved - 200 grams
  • Red onion, thinly sliced - 1 medium
  • Garlic, minced - 2 cloves
  • Olive oil - 3 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh oregano, chopped - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large baking dish, combine the sliced olives, cherry tomatoes, red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil, lemon juice, salt, and black pepper. Toss to combine.
  3. Place the cod fillets on top of the vegetable mixture in the baking dish. Drizzle the remaining tablespoon of olive oil over the cod, and season with salt and pepper.
  4. Sprinkle the chopped parsley and oregano over the top.
  5. Bake in the preheated oven for 20-25 minutes, or until the cod flakes easily with a fork.
  6. Remove from the oven and let it rest for a few minutes before serving.
