- Potatoes - 300 grams, cut into wedges
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade and ensure they are well-coated. Let them marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).
- While the chicken is marinating, prepare the potatoes by placing them in a bowl and tossing with olive oil, salt, and pepper.
