Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Oregano - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Kalamata olives - 50 grams, pitted and halved

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. In a baking dish, place the marinated chicken thighs skin-side up.
  5. Scatter the cherry tomatoes and Kalamata olives around the chicken in the baking dish.
  6. Sprinkle crumbled feta cheese over the chicken and vegetables.
  7. Bake in the preheated oven for 30-35 minutes or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
