Ingredients

  • Cauliflower - 1 medium head
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 small, sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower and slice it into 1.5 cm thick steaks.
  3. In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, paprika, lemon juice, salt, and black pepper.
  4. Place the cauliflower steaks on a baking sheet lined with parchment paper and brush both sides generously with the olive oil mixture.
  5. Arrange the halved cherry tomatoes and sliced red onion around the cauliflower on the baking sheet. Drizzle any remaining oil mixture over the vegetables.
  6. Bake in the preheated oven for 25-30 minutes, until the cauliflower is tender and golden brown, flipping the steaks halfway through.
  7. Once baked, remove from the oven and sprinkle with fresh parsley before serving.
