- Cauliflower - 1 medium head
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 200 grams, halved
- Red onion - 1 small, sliced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower and slice it into 1.5 cm thick steaks.
- In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, paprika, lemon juice, salt, and black pepper.
- Place the cauliflower steaks on a baking sheet lined with parchment paper and brush both sides generously with the olive oil mixture.
- Arrange the halved cherry tomatoes and sliced red onion around the cauliflower on the baking sheet. Drizzle any remaining oil mixture over the vegetables.
- Bake in the preheated oven for 25-30 minutes, until the cauliflower is tender and golden brown, flipping the steaks halfway through.
- Once baked, remove from the oven and sprinkle with fresh parsley before serving.
