Ingredients

  • Cauliflower - 1 medium head
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Canned diced tomatoes - 400 grams
  • Feta cheese - 100 grams, crumbled
  • Oregano - 1 teaspoon, dried
  • Parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and cut the cauliflower into bite-sized florets.
  3. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  4. Add minced garlic and sauté for another minute until fragrant.
  5. Stir in the canned diced tomatoes, oregano, salt, and black pepper. Let it simmer for 5-7 minutes.
  6. In a baking dish, combine the cauliflower florets with the tomato mixture, ensuring the florets are well coated.
  7. Sprinkle the crumbled feta cheese on top of the cauliflower and tomato mixture.
  8. Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and the cheese is golden.
  9. Remove from the oven and garnish with chopped parsley before serving.
