- Onion - 1 medium, chopped
- Canned diced tomatoes - 400 grams
- Feta cheese - 100 grams, crumbled
- Oregano - 1 teaspoon, dried
- Parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and cut the cauliflower into bite-sized florets.
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and sauté for another minute until fragrant.
- Stir in the canned diced tomatoes, oregano, salt, and black pepper. Let it simmer for 5-7 minutes.
- In a baking dish, combine the cauliflower florets with the tomato mixture, ensuring the florets are well coated.
- Sprinkle the crumbled feta cheese on top of the cauliflower and tomato mixture.
- Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and the cheese is golden.
- Remove from the oven and garnish with chopped parsley before serving.
