Ingredients
- Artichokes - 2 whole
- Feta cheese - 100 grams, crumbled
- Breadcrumbs - 50 grams
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 ml
Steps
- Preheat the oven to 180°C (350°F).
- Prepare the artichokes by trimming the stems and removing the tough outer leaves until you reach the tender ones.
- Cut the top inch off the artichokes and use a spoon to scoop out the fuzzy choke in the center.
- In a mixing bowl, combine crumbled feta cheese, breadcrumbs, minced garlic, chopped parsley, lemon juice, salt, and black pepper. Mix well.
- Fill each artichoke with the stuffing mixture, pressing it down gently to pack it in.
- Place the stuffed artichokes in a baking dish and pour the olive oil and water around them.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the artichokes are tender and the tops are golden brown.
- Remove from the oven and let cool for a few minutes before serving.
