Ingredients

  • Artichokes - 2 whole
  • Feta cheese - 100 grams, crumbled
  • Breadcrumbs - 50 grams
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Prepare the artichokes by trimming the stems and removing the tough outer leaves until you reach the tender ones.
  3. Cut the top inch off the artichokes and use a spoon to scoop out the fuzzy choke in the center.
  4. In a mixing bowl, combine crumbled feta cheese, breadcrumbs, minced garlic, chopped parsley, lemon juice, salt, and black pepper. Mix well.
  5. Fill each artichoke with the stuffing mixture, pressing it down gently to pack it in.
  6. Place the stuffed artichokes in a baking dish and pour the olive oil and water around them.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, until the artichokes are tender and the tops are golden brown.
  9. Remove from the oven and let cool for a few minutes before serving.
