Ingredients
- Cod fillet - 200 grams
- All-purpose flour - 50 grams
- Cornstarch - 20 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sparkling water - 100 ml
- Olive oil - for frying
- Potato - 200 grams
- Garlic - 2 cloves
- Lemon juice - 2 tablespoons
- Olive oil - 4 tablespoons
- Salt - to taste
- Parsley - for garnish
Steps
- Peel and chop the potato into small chunks and boil in salted water until tender, about 15 minutes.
- While the potatoes are boiling, prepare the batter for the cod by mixing flour, cornstarch, baking powder, salt, and pepper in a bowl.
- Gradually add the sparkling water to the dry mixture, whisking until smooth and slightly thick.
- Rinse the cod fillet and pat dry, then cut it into serving pieces.
- Heat olive oil in a frying pan over medium-high heat for frying the cod.
- Dip each piece of cod into the batter, allowing excess to drip off, then carefully place in the hot oil.
- Fry the cod for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
- Once the potatoes are soft, drain and transfer them to a bowl. Add minced garlic, lemon juice, olive oil, and salt to taste.
- Mash the mixture until smooth and creamy, adjusting the consistency with a little water if necessary.
- Serve the fried cod with the skordalia on the side, garnished with chopped parsley.
