Ingredients

  • Cod fillet - 200 grams
  • All-purpose flour - 50 grams
  • Cornstarch - 20 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sparkling water - 100 ml
  • Olive oil - for frying
  • Potato - 200 grams
  • Garlic - 2 cloves
  • Lemon juice - 2 tablespoons
  • Olive oil - 4 tablespoons
  • Salt - to taste
  • Parsley - for garnish

Steps

  1. Peel and chop the potato into small chunks and boil in salted water until tender, about 15 minutes.
  2. While the potatoes are boiling, prepare the batter for the cod by mixing flour, cornstarch, baking powder, salt, and pepper in a bowl.
  3. Gradually add the sparkling water to the dry mixture, whisking until smooth and slightly thick.
  4. Rinse the cod fillet and pat dry, then cut it into serving pieces.
  5. Heat olive oil in a frying pan over medium-high heat for frying the cod.
  6. Dip each piece of cod into the batter, allowing excess to drip off, then carefully place in the hot oil.
  7. Fry the cod for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
  8. Once the potatoes are soft, drain and transfer them to a bowl. Add minced garlic, lemon juice, olive oil, and salt to taste.
  9. Mash the mixture until smooth and creamy, adjusting the consistency with a little water if necessary.
  10. Serve the fried cod with the skordalia on the side, garnished with chopped parsley.
