- Eggplant - 1 medium (about 250g)
- Tahini - 2 tablespoons (30g)
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons (30ml)
- Olive oil - 1 tablespoon (15ml), plus extra for drizzling
- Salt - 1/2 teaspoon (3g)
- Cumin - 1/4 teaspoon (1g)
- Smoked paprika - 1/4 teaspoon (1g)
- Fresh parsley - 1 tablespoon, chopped (optional for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Prick the eggplant with a fork in several places and place it on a baking sheet.
- Roast the eggplant in the preheated oven for about 25-30 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplant from the oven and let it cool for a few minutes before peeling off the skin.
- In a mixing bowl, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, salt, cumin, and smoked paprika.
- Use a fork or a food processor to blend the ingredients until you reach your desired consistency (smooth or slightly chunky).
- Taste and adjust seasoning if necessary.
- Transfer the Baba Ghanoush to a serving bowl, drizzle with olive oil, and garnish with chopped parsley if desired.
- Serve with pita bread, fresh vegetables, or as part of a mezze platter.
