Ingredients

  • Eggplant - 1 medium (about 250g)
  • Tahini - 2 tablespoons (30g)
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons (30ml)
  • Olive oil - 1 tablespoon (15ml), plus extra for drizzling
  • Salt - 1/2 teaspoon (3g)
  • Cumin - 1/4 teaspoon (1g)
  • Smoked paprika - 1/4 teaspoon (1g)
  • Fresh parsley - 1 tablespoon, chopped (optional for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Prick the eggplant with a fork in several places and place it on a baking sheet.
  3. Roast the eggplant in the preheated oven for about 25-30 minutes, or until the skin is charred and the flesh is soft.
  4. Remove the eggplant from the oven and let it cool for a few minutes before peeling off the skin.
  5. In a mixing bowl, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, salt, cumin, and smoked paprika.
  6. Use a fork or a food processor to blend the ingredients until you reach your desired consistency (smooth or slightly chunky).
  7. Taste and adjust seasoning if necessary.
  8. Transfer the Baba Ghanoush to a serving bowl, drizzle with olive oil, and garnish with chopped parsley if desired.
  9. Serve with pita bread, fresh vegetables, or as part of a mezze platter.
