  • Kalamata olives - 50 grams, pitted and halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Extra virgin olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by preparing all the vegetables: dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the parsley.
  2. In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, and halved Kalamata olives.
  3. Cut the avocado in half, remove the pit, and scoop the flesh into the bowl. Gently toss the ingredients together to mix.
