- Chicken or vegetable broth - 500 ml
- Eggs - 2 large
- Lemon juice - 30 ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a medium saucepan, bring the chicken or vegetable broth to a boil.
- Add the rice and salt, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, whisk the eggs and lemon juice together in a bowl until well combined.
- Once the rice is cooked, remove it from heat and let it sit for a few minutes.
- Gradually add a ladle of hot broth from the rice to the egg mixture, whisking constantly to temper the eggs and prevent curdling.
- Slowly pour the tempered egg mixture back into the rice, stirring continuously until the rice is creamy and well coated.
- Drizzle the olive oil over the rice, season with black pepper, and mix well.
- Serve hot, garnished with chopped fresh parsley.
