Ingredients

  • Long grain rice - 150 grams
  • Chicken or vegetable broth - 500 ml
  • Eggs - 2 large
  • Lemon juice - 30 ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a medium saucepan, bring the chicken or vegetable broth to a boil.
  2. Add the rice and salt, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.
  3. While the rice is cooking, whisk the eggs and lemon juice together in a bowl until well combined.
  4. Once the rice is cooked, remove it from heat and let it sit for a few minutes.
  5. Gradually add a ladle of hot broth from the rice to the egg mixture, whisking constantly to temper the eggs and prevent curdling.
  6. Slowly pour the tempered egg mixture back into the rice, stirring continuously until the rice is creamy and well coated.
  7. Drizzle the olive oil over the rice, season with black pepper, and mix well.
  8. Serve hot, garnished with chopped fresh parsley.
