Ingredients
- Ground lamb - 250 grams
- Garlic - 2 cloves, minced
- Red onion - 50 grams, finely chopped
- Fresh parsley - 15 grams, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1 large
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Cauliflower - 200 grams, riced
- Cucumber - 1, sliced for garnish
- Olives - 30 grams, for garnish
Steps
- In a large bowl, combine the ground lamb, minced garlic, chopped red onion, parsley, oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Form the mixture into two equal-sized patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until they reach an internal temperature of 75°C.
- While the patties are cooking, prepare the avgolemono sauce by whisking together the egg and lemon juice in a small bowl until smooth.
- Once the patties are cooked, remove them from the skillet and set aside. In the same skillet, reduce heat to low and add a few tablespoons of water to deglaze the pan, scraping up any brown bits.
- Slowly add the egg-lemon mixture to the skillet while stirring continuously to create a creamy sauce. Do not let it boil.
- Serve the lamb patties topped with the avgolemono sauce, garnished with sliced cucumbers and olives.
- For an added touch, serve with riced cauliflower as a side.
