Ingredients

  • Ground lamb - 250 grams
  • Garlic - 2 cloves, minced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 15 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cauliflower - 200 grams, riced
  • Cucumber - 1, sliced for garnish
  • Olives - 30 grams, for garnish

Steps

  1. In a large bowl, combine the ground lamb, minced garlic, chopped red onion, parsley, oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  2. Form the mixture into two equal-sized patties.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until they reach an internal temperature of 75°C.
  4. While the patties are cooking, prepare the avgolemono sauce by whisking together the egg and lemon juice in a small bowl until smooth.
  5. Once the patties are cooked, remove them from the skillet and set aside. In the same skillet, reduce heat to low and add a few tablespoons of water to deglaze the pan, scraping up any brown bits.
  6. Slowly add the egg-lemon mixture to the skillet while stirring continuously to create a creamy sauce. Do not let it boil.
  7. Serve the lamb patties topped with the avgolemono sauce, garnished with sliced cucumbers and olives.
  8. For an added touch, serve with riced cauliflower as a side.
