- Chicken breast - 200 grams
- Chicken broth - 500 ml
- Eggs - 2 large
- Lemon juice - 30 ml
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped

- Black pepper - to taste
Steps
- In a pot, bring the chicken broth to a simmer over medium heat.
- Add the chicken breast to the broth and cook for about 15-20 minutes, or until fully cooked.
- Remove the chicken from the pot and let it cool slightly. Shred the chicken into bite-sized pieces.
- In a bowl, whisk together the eggs and lemon juice until well combined.
- Slowly ladle about 1 cup of hot chicken broth into the egg mixture while whisking continuously to temper the eggs.
- Pour the egg mixture back into the pot with the remaining broth, stirring constantly to prevent the eggs from scrambling.
- Add the shredded chicken back into the pot and heat gently until warmed through. Do not boil.
- Stir in the olive oil, chopped parsley, and season with salt and black pepper to taste.
- Serve hot, garnished with additional parsley if desired.
