Ingredients

  • Chicken breast - 200 grams
  • Chicken broth - 500 ml
  • Eggs - 2 large
  • Lemon juice - 30 ml
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, bring the chicken broth to a simmer over medium heat.
  2. Add the chicken breast to the broth and cook for about 15-20 minutes, or until fully cooked.
  3. Remove the chicken from the pot and let it cool slightly. Shred the chicken into bite-sized pieces.
  4. In a bowl, whisk together the eggs and lemon juice until well combined.
  5. Slowly ladle about 1 cup of hot chicken broth into the egg mixture while whisking continuously to temper the eggs.
  6. Pour the egg mixture back into the pot with the remaining broth, stirring constantly to prevent the eggs from scrambling.
  7. Add the shredded chicken back into the pot and heat gently until warmed through. Do not boil.
  8. Stir in the olive oil, chopped parsley, and season with salt and black pepper to taste.
  9. Serve hot, garnished with additional parsley if desired.
