- Carrot - 1 medium, sliced
- Celery - 1 stalk, diced
- Tomatoes - 400 grams, diced (canned or fresh)
- Vegetable broth - 500 ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, sliced carrot, and diced celery, cooking for another 5 minutes until the vegetables begin to soften.
- Add the diced tomatoes, artichoke hearts, vegetable broth, dried oregano, dried thyme, salt, and black pepper to the pot.
- Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
- Let it cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld.
