Ingredients

  • Artichoke hearts - 300 grams, canned or frozen
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, sliced
  • Celery - 1 stalk, diced
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Vegetable broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, sliced carrot, and diced celery, cooking for another 5 minutes until the vegetables begin to soften.
  4. Add the diced tomatoes, artichoke hearts, vegetable broth, dried oregano, dried thyme, salt, and black pepper to the pot.
  5. Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
  6. Let it cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld.
  7. Taste and adjust seasoning if necessary.
