Ingredients

  • Artichoke hearts - 400 grams (canned or frozen, drained if canned)
  • Yellow onion - 1 medium (about 150 grams, chopped)
  • Garlic - 3 cloves (minced)
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons (chopped)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut cream - 100 ml (optional, for creaminess)

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic to the pot and cook for another 1-2 minutes, until fragrant.
  3. Stir in the drained artichoke hearts, vegetable broth, salt, and black pepper. Bring the mixture to a simmer.
  4. Cook for about 15 minutes, allowing the flavors to meld together.
  5. Remove the pot from heat and blend the soup using an immersion blender until smooth. For a creamier texture, you can add coconut cream at this stage and blend until fully incorporated.
  6. Return the pot to low heat, stirring in the lemon juice and chopped dill. Adjust seasoning if needed.
  7. Serve hot, garnished with additional dill if desired.
