- Garlic - 3 cloves (minced)
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Lemon juice - 2 tablespoons
- Fresh dill - 2 tablespoons (chopped)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut cream - 100 ml (optional, for creaminess)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic to the pot and cook for another 1-2 minutes, until fragrant.
- Stir in the drained artichoke hearts, vegetable broth, salt, and black pepper. Bring the mixture to a simmer.
- Cook for about 15 minutes, allowing the flavors to meld together.
- Remove the pot from heat and blend the soup using an immersion blender until smooth. For a creamier texture, you can add coconut cream at this stage and blend until fully incorporated.
- Return the pot to low heat, stirring in the lemon juice and chopped dill. Adjust seasoning if needed.
