Ingredients

  • Cauliflower Rice - 400 grams
  • Artichoke Hearts (canned or frozen) - 200 grams, drained and chopped
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Lemon Juice - 1 tablespoon
  • Fresh Dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Vegetable Broth - 200 ml

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the chopped artichoke hearts and cook for another 2-3 minutes.
  4. Add the cauliflower rice to the skillet and mix well with the artichokes, onions, and garlic.
  5. Pour in the vegetable broth and lemon juice, and season with salt and black pepper.
  6. Cover the skillet and let it simmer for about 10-12 minutes, stirring occasionally, until the cauliflower rice is tender.
  7. Remove from heat and stir in the fresh dill before serving.
