- Cauliflower Rice - 400 grams

- Olive Oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Lemon Juice - 1 tablespoon
- Fresh Dill - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Vegetable Broth - 200 ml
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the chopped artichoke hearts and cook for another 2-3 minutes.
- Add the cauliflower rice to the skillet and mix well with the artichokes, onions, and garlic.
- Pour in the vegetable broth and lemon juice, and season with salt and black pepper.
- Cover the skillet and let it simmer for about 10-12 minutes, stirring occasionally, until the cauliflower rice is tender.
- Remove from heat and stir in the fresh dill before serving.
