- Whole wheat pita bread - 2 pieces
- Canned artichoke hearts, drained and chopped - 200 grams
- Cherry tomatoes, halved - 100 grams
- Red onion, thinly sliced - 50 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Fresh oregano, chopped - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons
- Fresh parsley, chopped (for garnish) - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the chopped artichoke hearts, halved cherry tomatoes, sliced red onion, minced garlic, olive oil, oregano, salt, and pepper. Mix well.
- Place the whole wheat pita breads on a baking sheet lined with parchment paper.
- Spread the artichoke mixture evenly over each pita bread.
- Sprinkle nutritional yeast on top of the artichoke mixture for a cheesy flavor.
- Bake in the preheated oven for 15-20 minutes, or until the pitas are crispy and the vegetables are tender.
- Remove from the oven and let cool for a few minutes.
