Ingredients

  • Whole wheat pita bread - 2 pieces
  • Canned artichoke hearts, drained and chopped - 200 grams
  • Cherry tomatoes, halved - 100 grams
  • Red onion, thinly sliced - 50 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Fresh oregano, chopped - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Fresh parsley, chopped (for garnish) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the chopped artichoke hearts, halved cherry tomatoes, sliced red onion, minced garlic, olive oil, oregano, salt, and pepper. Mix well.
  3. Place the whole wheat pita breads on a baking sheet lined with parchment paper.
  4. Spread the artichoke mixture evenly over each pita bread.
  5. Sprinkle nutritional yeast on top of the artichoke mixture for a cheesy flavor.
  6. Bake in the preheated oven for 15-20 minutes, or until the pitas are crispy and the vegetables are tender.
  7. Remove from the oven and let cool for a few minutes.
  8. Garnish with chopped fresh parsley before slicing and serving.
