Ingredients

  • Unsweetened almond milk - 150 milliliters
  • Butter - 30 grams
  • Vanilla extract - 1 teaspoon
  • Almonds (sliced, for garnish) - 10 grams
  • Ground cardamom - 1/4 teaspoon

Steps

  1. In a medium saucepan, melt the butter over low heat.
  2. Add the almond flour to the melted butter, stirring continuously for about 5 minutes until the mixture is lightly toasted and fragrant.
  3. In a separate bowl, combine the erythritol, almond milk, vanilla extract, and ground cardamom. Mix well.
  4. Gradually pour the almond milk mixture into the toasted almond flour, stirring constantly to prevent lumps.
  5. Cook the mixture over medium heat, stirring until it thickens and starts to pull away from the sides of the pan, about 5-7 minutes.
  6. Once thickened, remove from heat and pour the mixture into a small greased dish or mold, smoothing the top with a spatula.
  7. Let it cool to room temperature, then refrigerate for at least 1 hour until set.
  8. Before serving, garnish with sliced almonds.
