- Butter - 30 grams
- Vanilla extract - 1 teaspoon
- Almonds (sliced, for garnish) - 10 grams
- Ground cardamom - 1/4 teaspoon
Steps
- In a medium saucepan, melt the butter over low heat.
- Add the almond flour to the melted butter, stirring continuously for about 5 minutes until the mixture is lightly toasted and fragrant.
- In a separate bowl, combine the erythritol, almond milk, vanilla extract, and ground cardamom. Mix well.
- Gradually pour the almond milk mixture into the toasted almond flour, stirring constantly to prevent lumps.
- Cook the mixture over medium heat, stirring until it thickens and starts to pull away from the sides of the pan, about 5-7 minutes.
- Once thickened, remove from heat and pour the mixture into a small greased dish or mold, smoothing the top with a spatula.
- Let it cool to room temperature, then refrigerate for at least 1 hour until set.
