Ingredients

  • Ground lamb - 400 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/4, finely chopped
  • Lemon juice - 1 tablespoon
  • Kalamata olives - 50 grams, pitted and sliced

Steps

  1. In a large bowl, combine the ground lamb, minced garlic, chopped parsley, chopped mint, dried oregano, salt, and black pepper. Mix until well combined.
  2. Divide the lamb mixture into two equal portions and shape them into patties.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the lamb patties and cook for about 5-6 minutes on each side, or until they reach your desired doneness.
  4. While the patties are cooking, prepare the salad. In a separate bowl, combine the diced cucumber, diced tomato, finely chopped red onion, kalamata olives, lemon juice, and the remaining tablespoon of olive oil. Toss gently to combine.
  5. Once the patties are cooked, remove them from the skillet and let them rest for a few minutes before serving.
  6. Serve the lamb patties with the fresh cucumber-tomato salad on the side.
