- Ground lamb - 400 grams
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red onion - 1/4, finely chopped
- Lemon juice - 1 tablespoon
- Kalamata olives - 50 grams, pitted and sliced
Steps
- In a large bowl, combine the ground lamb, minced garlic, chopped parsley, chopped mint, dried oregano, salt, and black pepper. Mix until well combined.
- Divide the lamb mixture into two equal portions and shape them into patties.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the lamb patties and cook for about 5-6 minutes on each side, or until they reach your desired doneness.
- While the patties are cooking, prepare the salad. In a separate bowl, combine the diced cucumber, diced tomato, finely chopped red onion, kalamata olives, lemon juice, and the remaining tablespoon of olive oil. Toss gently to combine.
- Once the patties are cooked, remove them from the skillet and let them rest for a few minutes before serving.
- Serve the lamb patties with the fresh cucumber-tomato salad on the side.
