- Zucchini - 2 medium (about 400g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200g, halved
- Red bell pepper - 1 medium, diced
- Black olives - 50g, pitted and sliced
- Fresh basil - 10g, chopped
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 20g, grated (optional)
Steps
- Using a spiralizer or a vegetable peeler, create zucchini noodles from the zucchini and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the diced red bell pepper and cook for 3-4 minutes until softened.
- Add the halved cherry tomatoes, olives, dried oregano, salt, and pepper, cooking for an additional 3-4 minutes until the tomatoes start to burst.
- Toss in the zucchini noodles and chopped basil, cooking for 2-3 minutes until the noodles are tender but still al dente.
- Serve hot, garnished with grated Parmesan cheese if desired.
