Ingredients

  • Zucchini - 300 grams
  • Chickpea flour - 60 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 60 milliliters

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, chickpea flour, nutritional yeast, garlic powder, onion powder, chopped parsley, salt, and black pepper.
  3. Add water gradually to the mixture until it forms a thick batter.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Spoon heaping tablespoons of the batter onto the skillet and flatten them slightly to form fritters.
  6. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
  7. Transfer the fritters to a plate lined with paper towels to absorb excess oil.
  8. Repeat the process with the remaining batter, adding more oil as needed.
  9. Serve warm with your favorite dipping sauce or as part of a BBQ spread.
