- Chickpea flour - 60 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 60 milliliters
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, chickpea flour, nutritional yeast, garlic powder, onion powder, chopped parsley, salt, and black pepper.
- Add water gradually to the mixture until it forms a thick batter.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Spoon heaping tablespoons of the batter onto the skillet and flatten them slightly to form fritters.
- Cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Transfer the fritters to a plate lined with paper towels to absorb excess oil.
- Repeat the process with the remaining batter, adding more oil as needed.
