Vichyssoise

Ingredients
- Leeks - 150 grams, cleaned and sliced
- Potatoes - 200 grams, peeled and diced
- Vegetable broth - 500 ml
- Coconut cream - 100 ml
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Fresh chives - 5 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat olive oil over medium heat and add the sliced leeks and minced garlic. Sauté for about 5 minutes until softened.
- Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 15 minutes or until the potatoes are tender.
- Remove the pot from heat and allow the mixture to cool slightly. Then, blend until smooth using an immersion blender or a countertop blender.
- Stir in the coconut cream, and season with salt and black pepper to taste. Blend again until fully combined.
- Chill the soup in the refrigerator for at least 1 hour before serving.
- Serve cold, garnished with chopped chives.
