Ingredients

  • Leeks - 150 grams, cleaned and sliced
  • Potatoes - 200 grams, peeled and diced
  • Vegetable broth - 500 ml
  • Coconut cream - 100 ml
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Fresh chives - 5 grams, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat olive oil over medium heat and add the sliced leeks and minced garlic. Sauté for about 5 minutes until softened.
  2. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 15 minutes or until the potatoes are tender.
  3. Remove the pot from heat and allow the mixture to cool slightly. Then, blend until smooth using an immersion blender or a countertop blender.
  4. Stir in the coconut cream, and season with salt and black pepper to taste. Blend again until fully combined.
  5. Chill the soup in the refrigerator for at least 1 hour before serving.
  6. Serve cold, garnished with chopped chives.
