- Pumpkin - 400 grams, peeled and cubed
- Carrot - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Heavy cream - 50 ml
- Salt - to taste
- Black pepper - to taste
- Nutmeg - a pinch
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and cubed pumpkin to the pot. Stir well and cook for another 5 minutes.
- Pour in the vegetable broth, ensuring the vegetables are covered. Bring to a boil, then reduce the heat and let it simmer for 15 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer to a countertop blender in batches.
- Stir in the heavy cream, and season with salt, black pepper, and a pinch of nutmeg. Heat through for an additional 2-3 minutes.
- Serve hot, garnished with fresh parsley.
