  • Carrot - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Heavy cream - 50 ml
  • Salt - to taste
  • Black pepper - to taste
  • Nutmeg - a pinch
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the diced carrot and cubed pumpkin to the pot. Stir well and cook for another 5 minutes.
  3. Pour in the vegetable broth, ensuring the vegetables are covered. Bring to a boil, then reduce the heat and let it simmer for 15 minutes, or until the pumpkin is tender.
  4. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer to a countertop blender in batches.
  5. Stir in the heavy cream, and season with salt, black pepper, and a pinch of nutmeg. Heat through for an additional 2-3 minutes.
  6. Serve hot, garnished with fresh parsley.
