- Potimarron - 400 grams
- Yellow onion - 1 medium (about 150 grams)
- Garlic - 2 cloves
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Heavy cream - 50 ml
- Salt - to taste
- Black pepper - to taste
- Nutmeg - a pinch
- Fresh chives - for garnish
Steps
- Cut the potimarron in half, remove the seeds, and scoop out the flesh. Dice the flesh into small cubes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5-7 minutes.
- Add the diced potimarron to the pot and stir for a couple of minutes.
- Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for about 20 minutes or until the potimarron is tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until creamy.
- Stir in the heavy cream, and season with salt, black pepper, and nutmeg to taste.
- Serve hot, garnished with chopped fresh chives.
