Ingredients

  • Potimarron - 400 grams
  • Yellow onion - 1 medium (about 150 grams)
  • Garlic - 2 cloves
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Heavy cream - 50 ml
  • Salt - to taste
  • Black pepper - to taste
  • Nutmeg - a pinch
  • Fresh chives - for garnish

Steps

  1. Cut the potimarron in half, remove the seeds, and scoop out the flesh. Dice the flesh into small cubes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5-7 minutes.
  3. Add the diced potimarron to the pot and stir for a couple of minutes.
  4. Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for about 20 minutes or until the potimarron is tender.
  5. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until creamy.
  6. Stir in the heavy cream, and season with salt, black pepper, and nutmeg to taste.
  7. Serve hot, garnished with chopped fresh chives.
