- Leeks - 300 grams, cleaned and chopped
- Potato - 150 grams, peeled and diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 750 ml
- Coconut cream - 100 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh chives - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until they become translucent.
- Stir in the chopped leeks and diced potato, cooking for another 5 minutes until the leeks soften.
- Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for 15 minutes or until the potatoes are tender.
- Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
- Stir in the coconut cream, and season with salt and black pepper to taste.
- Serve hot, garnished with fresh chives.
