Ingredients

  • Leeks - 300 grams, cleaned and chopped
  • Potato - 150 grams, peeled and diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 750 ml
  • Coconut cream - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh chives - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until they become translucent.
  3. Stir in the chopped leeks and diced potato, cooking for another 5 minutes until the leeks soften.
  4. Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for 15 minutes or until the potatoes are tender.
  5. Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  6. Stir in the coconut cream, and season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh chives.
