Ingredients

  • Courgettes (zucchini) - 300 grams
  • Onion - 1 medium (about 100 grams)
  • Garlic - 1 clove
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon (15 ml)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a few leaves for garnish
  • Lemon juice - 1 teaspoon (5 ml)

Steps

  1. Wash and trim the courgettes, then cut them into small pieces.
  2. Peel and chop the onion and garlic.
  3. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent, about 5 minutes.
  4. Add the courgettes to the pot and cook for another 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes until the courgettes are tender.
  6. Remove the pot from heat and allow it to cool slightly. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
  7. Season with salt, black pepper, and lemon juice to taste. Blend again if needed to combine.
  8. Serve hot, garnished with fresh basil leaves.
