- Courgettes (zucchini) - 300 grams
- Onion - 1 medium (about 100 grams)
- Garlic - 1 clove
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon (15 ml)
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a few leaves for garnish
- Lemon juice - 1 teaspoon (5 ml)
Steps
- Wash and trim the courgettes, then cut them into small pieces.
- Peel and chop the onion and garlic.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent, about 5 minutes.
- Add the courgettes to the pot and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes until the courgettes are tender.
- Remove the pot from heat and allow it to cool slightly. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
- Season with salt, black pepper, and lemon juice to taste. Blend again if needed to combine.
- Serve hot, garnished with fresh basil leaves.
