Ingredients
- Fresh mushrooms (button or cremini) - 200 grams
- Shallots - 2 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Chopped parsley - for garnish
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped shallots and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the chopped mushrooms to the pan and cook for 5-7 minutes until they release their moisture and begin to brown.
- Pour in the vegetable broth and bring to a simmer. Add the fresh thyme, salt, and pepper to taste.
- Simmer the mixture for 10 minutes to allow the flavors to meld.
- Remove from heat and use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
- Return the blended soup to the saucepan and stir in the coconut milk. Heat gently for another 2-3 minutes.
- Serve hot, garnished with chopped parsley.
