Ingredients

  • Fresh mushrooms (button or cremini) - 200 grams
  • Shallots - 2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Chopped parsley - for garnish

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped shallots and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the chopped mushrooms to the pan and cook for 5-7 minutes until they release their moisture and begin to brown.
  5. Pour in the vegetable broth and bring to a simmer. Add the fresh thyme, salt, and pepper to taste.
  6. Simmer the mixture for 10 minutes to allow the flavors to meld.
  7. Remove from heat and use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
  8. Return the blended soup to the saucepan and stir in the coconut milk. Heat gently for another 2-3 minutes.
  9. Serve hot, garnished with chopped parsley.
