- Zucchini - 150 grams
- Eggplant - 150 grams
- Tomato - 150 grams
- Bell pepper (red) - 100 grams
- Onion - 50 grams
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon
- Fresh rosemary - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese (optional) - 30 grams
Steps
- Preheat your grill or oven to 190°C (375°F).
- Thinly slice the zucchini, eggplant, tomato, and bell pepper into even rounds, about 5 mm thick.
- Finely chop the onion and garlic.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onion and garlic until translucent, about 5 minutes.
- In a baking dish, spread the sautéed onion and garlic evenly on the bottom.
- Layer the sliced vegetables in a circular pattern, alternating them to create a visually appealing design.
- Drizzle the remaining tablespoon of olive oil over the arranged vegetables, then sprinkle with salt, black pepper, thyme, and rosemary.
- If using, grate Parmesan cheese over the top for added flavor.
- Cover the baking dish with aluminum foil and place it on the grill or in the oven.
- Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from heat and let it cool for a few minutes before serving.
