Ingredients

  • Zucchini - 150 grams
  • Eggplant - 150 grams
  • Tomato - 150 grams
  • Bell pepper (red) - 100 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon
  • Fresh rosemary - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (optional) - 30 grams

Steps

  1. Preheat your grill or oven to 190°C (375°F).
  2. Thinly slice the zucchini, eggplant, tomato, and bell pepper into even rounds, about 5 mm thick.
  3. Finely chop the onion and garlic.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onion and garlic until translucent, about 5 minutes.
  5. In a baking dish, spread the sautéed onion and garlic evenly on the bottom.
  6. Layer the sliced vegetables in a circular pattern, alternating them to create a visually appealing design.
  7. Drizzle the remaining tablespoon of olive oil over the arranged vegetables, then sprinkle with salt, black pepper, thyme, and rosemary.
  8. If using, grate Parmesan cheese over the top for added flavor.
  9. Cover the baking dish with aluminum foil and place it on the grill or in the oven.
  10. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
  11. Remove from heat and let it cool for a few minutes before serving.
