- Potatoes - 400 grams
- Zucchini - 150 grams
- Red bell pepper - 100 grams
- Onion - 1 medium (about 100 grams)
- Garlic - 2 cloves
- Reblochon cheese - 200 grams
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 100 ml
Steps
- Preheat the BBQ grill to medium heat.
- Wash and peel the potatoes, then slice them thinly (about 3-4 mm).
- Cut the zucchini and red bell pepper into bite-sized pieces.
- Slice the onion and mince the garlic.
- In a large bowl, combine the sliced potatoes, zucchini, bell pepper, onion, garlic, olive oil, thyme, salt, and pepper. Mix well to coat the vegetables evenly.
- Place the vegetable mixture in a grilling basket or aluminum foil, and grill for about 25 minutes, stirring occasionally until the vegetables are tender.
- While the vegetables are grilling, cut the Reblochon cheese into slices.
- Once the vegetables are cooked, remove them from the grill and layer half of them in a small baking dish.
- Pour half of the vegetable broth over the first layer of vegetables, then add half of the cheese slices on top.
- Repeat the layering process with the remaining vegetables, broth, and cheese.
- Cover the baking dish with aluminum foil and place it on the grill. Cook for an additional 15 minutes until the cheese is melted and bubbly.
- Remove from the grill and let it cool for a few minutes before serving.
