- Chickpea flour - 100 grams
- Water - 200 milliliters
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Red onion - 50 grams, finely chopped
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a mixing bowl, combine chickpea flour, water, olive oil, salt, and black pepper. Whisk until smooth and let it rest for 10 minutes.
- Meanwhile, prepare the vegetables by dicing the zucchini and red bell pepper, and finely chopping the red onion.
- After the batter has rested, stir in the diced vegetables, thyme, and parsley until evenly mixed.
- Preheat a non-stick skillet or griddle over medium heat and add a little olive oil to coat the surface.
- Pour half of the batter into the skillet, spreading it out evenly. Cook for 5-7 minutes until the edges are golden brown.
- Carefully flip the socca using a spatula and cook for an additional 5 minutes on the other side until cooked through.
- Repeat with the remaining batter to make the second socca.
- Serve warm, garnished with additional parsley and a drizzle of olive oil if desired.
