Ingredients

  • Chickpea flour - 100 grams
  • Water - 200 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a mixing bowl, combine chickpea flour, water, olive oil, salt, and black pepper. Whisk until smooth and let it rest for 10 minutes.
  2. Meanwhile, prepare the vegetables by dicing the zucchini and red bell pepper, and finely chopping the red onion.
  3. After the batter has rested, stir in the diced vegetables, thyme, and parsley until evenly mixed.
  4. Preheat a non-stick skillet or griddle over medium heat and add a little olive oil to coat the surface.
  5. Pour half of the batter into the skillet, spreading it out evenly. Cook for 5-7 minutes until the edges are golden brown.
  6. Carefully flip the socca using a spatula and cook for an additional 5 minutes on the other side until cooked through.
  7. Repeat with the remaining batter to make the second socca.
  8. Serve warm, garnished with additional parsley and a drizzle of olive oil if desired.
