Ingredients

  • Zucchini - 1 medium, sliced into 1 cm rounds
  • Red bell pepper - 1 medium, cut into large chunks
  • Yellow bell pepper - 1 medium, cut into large chunks
  • Red onion - 1 medium, cut into wedges
  • Cherry tomatoes - 200 grams, halved
  • Eggplant - 1 medium, cut into 1 cm cubes
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 tablespoon, chopped
  • Fresh rosemary - 1 tablespoon, chopped
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the BBQ grill to medium-high heat.
  2. In a large bowl, combine the zucchini, red and yellow bell peppers, red onion, cherry tomatoes, and eggplant.
  3. Add the minced garlic, chopped thyme, chopped rosemary, olive oil, salt, and black pepper to the vegetables. Toss until everything is well coated.
  4. Thread the vegetables onto skewers, alternating between different types for a colorful presentation.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Remove the skewers from the grill and drizzle with balsamic vinegar before serving.
