- Zucchini - 1 medium, sliced into 1 cm rounds
- Red bell pepper - 1 medium, cut into large chunks
- Yellow bell pepper - 1 medium, cut into large chunks
- Red onion - 1 medium, cut into wedges
- Cherry tomatoes - 200 grams, halved
- Eggplant - 1 medium, cut into 1 cm cubes
- Garlic - 2 cloves, minced
- Fresh thyme - 1 tablespoon, chopped
- Fresh rosemary - 1 tablespoon, chopped
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the BBQ grill to medium-high heat.
- In a large bowl, combine the zucchini, red and yellow bell peppers, red onion, cherry tomatoes, and eggplant.
- Add the minced garlic, chopped thyme, chopped rosemary, olive oil, salt, and black pepper to the vegetables. Toss until everything is well coated.
- Thread the vegetables onto skewers, alternating between different types for a colorful presentation.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove the skewers from the grill and drizzle with balsamic vinegar before serving.
