- Pizza dough - 250 grams
- Olive oil - 2 tablespoons
- Yellow onion - 1 medium, thinly sliced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Eggplant - 100 grams, diced
- Black olives - 50 grams, pitted and sliced
- Fresh thyme - 1 teaspoon, chopped
- Garlic - 2 cloves, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your BBQ grill to medium heat.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and add the sliced onions. Cook for about 10 minutes, stirring occasionally, until the onions are caramelized.
- Add the minced garlic to the onions and cook for an additional 1-2 minutes until fragrant.
- In a separate bowl, combine the diced red bell pepper, zucchini, and eggplant. Drizzle with the remaining tablespoon of olive oil, season with salt, black pepper, and the chopped thyme. Mix well.
- Transfer the vegetable mixture to a grill-safe pan and place it on the BBQ. Grill for about 10-12 minutes, stirring occasionally until the vegetables are tender and slightly charred.
- Roll out the pizza dough on a floured surface to about 1 cm thick and place it on a grill-safe pizza stone or directly on the grill if it's clean.
- Spread the caramelized onions evenly over the dough, then top with the grilled vegetables and sliced black olives.
- Close the BBQ lid and grill for about 15-20 minutes, or until the dough is golden brown and cooked through.
- Remove the pissaladière from the grill, let it cool for a few minutes, then slice and serve warm.
