Ingredients

  • Pizza dough - 250 grams
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, thinly sliced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Eggplant - 100 grams, diced
  • Black olives - 50 grams, pitted and sliced
  • Fresh thyme - 1 teaspoon, chopped
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your BBQ grill to medium heat.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat and add the sliced onions. Cook for about 10 minutes, stirring occasionally, until the onions are caramelized.
  3. Add the minced garlic to the onions and cook for an additional 1-2 minutes until fragrant.
  4. In a separate bowl, combine the diced red bell pepper, zucchini, and eggplant. Drizzle with the remaining tablespoon of olive oil, season with salt, black pepper, and the chopped thyme. Mix well.
  5. Transfer the vegetable mixture to a grill-safe pan and place it on the BBQ. Grill for about 10-12 minutes, stirring occasionally until the vegetables are tender and slightly charred.
  6. Roll out the pizza dough on a floured surface to about 1 cm thick and place it on a grill-safe pizza stone or directly on the grill if it's clean.
  7. Spread the caramelized onions evenly over the dough, then top with the grilled vegetables and sliced black olives.
  8. Close the BBQ lid and grill for about 15-20 minutes, or until the dough is golden brown and cooked through.
  9. Remove the pissaladière from the grill, let it cool for a few minutes, then slice and serve warm.
