Ingredients

  • Zucchini - 1 medium, sliced into thick rounds
  • Red bell pepper - 1, cut into 2 cm pieces
  • Yellow bell pepper - 1, cut into 2 cm pieces
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 200 grams
  • Mushrooms - 200 grams, halved
  • Olive oil - 3 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if using wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, combine olive oil, chopped thyme, chopped rosemary, minced garlic, salt, and black pepper to create a marinade.
  2. Add the sliced zucchini, red and yellow bell peppers, red onion, cherry tomatoes, and mushrooms to the marinade. Toss well to coat the vegetables evenly.
  3. Cover the bowl with plastic wrap and let the vegetables marinate for at least 15 minutes.
  4. Preheat the grill or BBQ to medium-high heat.
  5. Thread the marinated vegetables onto the skewers, alternating the different types for a colorful presentation.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
  7. Remove from the grill and serve warm, drizzled with any remaining marinade if desired.
