Ingredients

  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Bell Pepper - 50 grams, finely chopped
  • Cooked Chickpeas - 150 grams, mashed
  • Garlic - 2 cloves, minced
  • Fresh Parsley - 30 grams, chopped
  • Ground Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • All-purpose Flour - 50 grams
  • Olive Oil - 2 tablespoons (for frying)
  • Greek Yogurt - 100 grams (for dipping)
  • Lemon Juice - 1 tablespoon (for dipping)
  • Salt - a pinch (for dipping)

Steps

  1. In a large bowl, combine the grated zucchini, grated carrot, chopped bell pepper, mashed chickpeas, minced garlic, and chopped parsley.
  2. Add ground cumin, paprika, salt, and black pepper to the mixture, and stir until well combined.
  3. Gradually add all-purpose flour to the mixture, mixing until it holds together but is not too sticky.
  4. Form the mixture into small balls or patties, about the size of a golf ball.
  5. Heat olive oil in a non-stick skillet over medium heat. Add the boulettes in batches, cooking for about 5 minutes on each side or until golden brown and crispy.
  6. While the boulettes are cooking, prepare the dip by mixing Greek yogurt, lemon juice, and a pinch of salt in a small bowl.
  7. Once cooked, serve the vegetable boulettes warm with the yogurt dip on the side.
